This Japanese liqueur is made with mild junmai-shu, brewed using Nagara River’s underground water, and a generous amount of Okuda Farm's brand-name strawberries, "Bijinhime”. It can also be enjoyed in a variety of ways, such as in a sorbet or as a sauce for vanilla ice cream.
Ginban uses carefully-selected sake brewing rice, a large-grain rice with a white opaque portion in the centre called a shinpaku (white heart). Its low protein content, which is the source of unwanted flavours, makes it great for sake brewing. However, it is also known as a difficult rice to harvest.
