YACHIYO JUNMAI GINJO Junmai Ginjo

Brewed with Yamadanishiki sake rice, grown in the brewery’s own rice fields. It has a mild aroma with a smooth umami flavour, and pairs well with a variety of food.

When heated up, it mellows out and brings out more umami, giving you a different experience. It is a slightly dry and refreshing Japanese sake.

In 1887, Kannichi Kaba built Kaba Shuzo near the Zomeki River, a branch of the Abu River that flows through the area. The morning and evening temperatures were severely cold, making it the perfect place for sake brewing. The name Yachiyo is derived from the line "chiyo ni yachiyo ni” from the national anthem of Japan, "Kimigayo”. “Chiyo ni yachiyo ni” means “for thousands of years”, and the sake brewed here was named Yachiyo in the hopes that the families of the people who drink this sake will prosper for many years to come. Later, when the company was established in 1953, the name was officially changed to Yachiyo Shuzo (Yachiyo Brewery).

When spring arrives, Yachiyo Shuzo begins its brewing process by preparing for the seedlings. When the golden ears of rice are abundant, the Yamadanishiki rice is harvested and the sake is brewed from around November to the very coldest time of the year. It is rare in Japan for a brewery to grow its own rice, and Yachiyo uses Yamadanishiki rice with minimal use of agricultural chemicals. It is highly regarded as a very high quality rice with low protein content, as protein can have a negative impact on the taste of sake.

The source of its brewing water is the abundant underground water of Mt. Taishoyama (646 m), a medium-hard water with high mineral content. The brewery has been cultivating sake rice with this water for more than 20 years, and has been working to integrate the farming and brewing process, from rice cultivation to the final brew.
