Taiwagura Shuzo was established in 1996 in Taiwa-cho of Miyagi Prefecture, an area with water that flows from the Funagata mountain range. It is one of the youngest sake breweries in the Tohoku region. In the beginning, the company focused on mechanisation by installing state-of-the-art equipment. But, since 2007, when it acquired the signature "Yuki-no-Matsushima" sake from a company in Sendai, the company has been increasingly using a more hands-on approach.
Alcohol is a living, breathing thing. Although Taiwagura Shuzo utilises the latest equipment and systems, years of knowledge and experience are essential to brewing delicious sake.
This is especially true for koji. The koji-making process is the most important as it determines the quality of the sake. Its brewers take great care in making the best koji possible by hand, as was done in the old days. In an increasingly automated world, it is also an essential job of the brewery to pass on the traditional techniques to the next generation.
Good sake brewing starts with people. With this in mind, Taiwagura Shuzo focuses on training young brewers to increase the level of their expertise.
