Niida Honke, founded in 1711 in the mid-Edo period, is located in Tamura-machi, a town in Koriyama City of Fukushima Prefecture. The name Tamura-machi is derived from the town’s large number of rice fields (ta means rice field).

The 300-year-old sake brewery is surrounded by lush green rice fields. The Niida family manages 6 hectares of its own rice fields, where Kamenoo and Omachi rice are grown naturally. The family cultivates the rice without the use of pesticides, chemical fertilisers, or even organic fertilisers. The rice yields from natural cultivation are lower than those from conventional cultivation methods. Kamenoo rice also is susceptible to disease– its tall ears of rice are vulnerable to rain and wind and collapse easily, making it a difficult rice to harvest. Nevertheless, the brewery strives to create unique flavours that cannot be found anywhere else.
