In 1909, Ryo Kagiwada, an 11th generation brewer of Nakazawa Shuzo, revived a type of yeast that had never before been used in Japanese sake. It has a slight sweetness and refreshing acidity unique to the yeast that has existed since the Meiji era. The sake is smooth, easy to drink and boasts a deep flavour. It is best served chilled in a wine glass.

Matsumidori sake is made from carefully-selected high quality sake rice and clear underground water from the Tanzawa mountain range. Even today, the company insists on making all of its sake manually, starting with the traditional koji making process and ending with the top vatting process.

It all begins by carefully polishing each grain of the sake rice. Because it is particular about creating pure sake, it carefully examines the ingredients and brews each batch meticulously, with humility and honesty.
