This Japanese sake uses Yamadanishiki rice produced in Hyogo Prefecture. It is a junmai daiginjo with an exquisite mellow aroma. Aged for a long time in low temperatures and using spring water that flows from the Kurobe area of the Northern Alps, it is a well-balanced, fruity, mature sake.
Ginban uses carefully-selected sake brewing rice, a large-grain rice with a white opaque portion in the centre called a shinpaku (white heart). Its low protein content, which is the source of unwanted flavours, makes it great for sake brewing. However, it is also known as a difficult rice to harvest.
