BIZEN MABOROSHI Junmai Ginjo

BIZEN MABOROSHI Junmai Ginjo

A junmai ginjo made from 100% Omachi rice, which has won numerous awards including the Monde Selection gold medal for three consecutive years. It has a subtly sweet aroma and umami. It is the most popular Japanese sake of Muromachi Shuzo.

Omachi rice is a local rice from Bizen (present-day Okayama Prefecture). Also known as maboroshi (fabled) rice, it requires time and labour not only to be cultivated, but also to be polished and processed. The brewery deliberately chooses to work with Omachi rice, even if it means more time and effort.

The brewery has a contract with the Seto Omachi Club (34 producers) in the Seto district of Akaiwa, Okayama, which is ranked as one of the best Omachi rice production areas in Japan. The quality of the brewery’s sake and its high level of sake brewing techniques have been recognised throughout the world, leading to accolades in numerous global competitions. It plans to continue to make sake from Omachi rice, and hopes to spread their love for Omachi rice around the world.
